The zero-carb meal that spiked to 159
Zero-carb meal. No bread, no rice, no fruit. Just meat and greens — the kind of plate that is supposed to be the safe choice.
Post-meal glucose peaked at 159 mg/dL around forty minutes, and was back to 92
by the two-hour mark.
The single-variable rule exists for exactly this moment — the plate that should have been boring and wasn't.
Two candidate explanations, both live: cortisol from a short night, and a hidden sugar in a marinade I did not check closely enough. Neither is confirmed, and a single reading does not get to name its own cause.
What it does confirm is narrower, and worth having anyway: zero-carb is not automatically zero-response. The body does not grade on ingredients alone.
